Burley, the volume brings together practical recipes and detailed notes relating to large-scale camp catering.
The booklet contains suggested menus and recipes suited to camp conditions, including scones, Rice Mexicano, jellied fruit, custard, sauces and gravies, puddings (sweets), cauliflower au gratin, roasting joints of meat, steak and kidney pie, breakfast dishes, scrambled eggs, bread, fruit salad marshmallow, and methods for frying, poaching and grilling fish. It also sets out rules for purchasing and storing vegetables, guidelines for food preparation, and a hand-drawn diagram demonstrating how to fit six dishes in the oven simultaneously.
Notes by Mrs Ruth Fox on cooking at Camp Toonallook for the first time are included at the rear of the volume.
